DIY Pancake Mix Without Baking Soda



This homemade pancake mix doesn’t require baking soda and still produces light, fluffy pancakes using baking powder as the leavening agent.

Ingredients for Pancake Mix:

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder (instead of baking soda)

½ teaspoon salt

Instructions to Make the Mix:

1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.


2. Store in an airtight container in a cool, dry place for up to 3 months.

To Make Pancakes Using the Mix:

Ingredients for 1 Batch (Makes about 8 pancakes):

1 cup of pancake mix

1 egg

¾ cup milk (or non-dairy milk)

2 tablespoons melted butter (or oil for a dairy-free option)

1 teaspoon vanilla extract (optional)


Steps:

1. In a mixing bowl, whisk together the egg, milk, melted butter, and vanilla extract.


2. Add 1 cup of the pancake mix and stir until just combined (do not overmix).


3. Heat a lightly greased skillet over medium heat. Pour ¼ cup of batter for each pancake.


4. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.


5. Serve warm with syrup, fruit, or your favorite toppings.
