How to Make Homemade Cake Mix Without Baking Powder.

Here’s a simple recipe to make a homemade cake mix without baking powder. Instead, we use baking soda combined with an acidic ingredient like cream of tartar or buttermilk to create the leavening effect.

Ingredients for Cake Mix:

2 ½ cups all-purpose flour

1 ¾ cups granulated sugar

½ teaspoon salt

1 teaspoon baking soda (instead of baking powder)

Optional Add-Ins:

1 teaspoon vanilla bean powder (optional for flavor)

Instructions to Make the Mix:

1. In a large mixing bowl, sift together the flour, sugar, salt, and baking soda.

2. Whisk the ingredients until evenly combined.

3. Transfer the mix to an airtight container and store in a cool, dry place for up to 6 months.

To Make a Cake Using the Mix:

Ingredients for 1 Cake:

2 ½ cups of your homemade cake mix

2 large eggs

1 cup buttermilk (or mix 1 cup milk with 1 tablespoon vinegar/lemon juice and let sit for 5 minutes)

½ cup unsalted butter, melted (or oil for a dairy-free option)

1 teaspoon vanilla extract

Steps:

1. Preheat your oven to 350°F (175°C) and grease a cake pan.

2. In a mixing bowl, combine the cake mix, eggs, buttermilk, melted butter, and vanilla. Whisk until smooth.

3. Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

4. Let the cake cool before serving or frosting.

This method replaces baking powder with baking soda and an acidic ingredient (buttermilk) for leavening, ensuring your cake is soft and fluffy!
